Sodium alginate, also called as Algin, is a kind of white or light yellow granular or powder, almost odorless and tasteless.It is a macromolecular compound with high viscosity, and a typical hydrophilic colloids. Because of its properties of stability, thickening and emulsifying, hydratability and gelling property, it is widely used in food, pharmaceutical, printing and dyeing, etc.Its functional properties are as follows:(1) strong hydrophilic, can be dissolved in cold and warm water, forming a very viscous homogeneous solution.(2) The real solution formed has softness, uniformity and other excellent properties that are difficult to obtain by other analogs.(3) It has a strong protective effect on colloid and strong emulsifying ability on oil.(4) Adding aluminum, barium, calcium, copper, iron, lead, zinc, nickel and other metal salts to the solution will generate insoluble alginate. These metal salts are buffers of phosphates and acetate of sodium and potassium, which can inhibit and delay solidification.Sodium Alginate is a gum obtained as a sodium salt of alginic acid, which is obtained from seaweed.
